Best Peanut Butter and Chocolate Balls


If you like peanut butter and chocolate, you'll love these:

1 pound powdered sugar
1 c. flaked coconut
1 c. margarine, softened
1 c. graham cracker crumbs
1 c. chunky peanut butter
1 c. chocolate chips
6 oz milk chocolate

Mix together sugar, crumbs, coconut, peanut butter and margarine. Shape into walnut size balls and refrigerate until thoroughly chilled.  In top of double boiler or in a microwave melt chocolate chips and milk chocolate. Turn off heat.  With toothpick, dip balls into chocolate.  Place on wax paper to cool.

My stepdaughter Julie and I have made similar peanut butter balls (see recipe below), but I like these better. Probably because of the coconut. There's some crunch from the chunky peanut butter, and the graham cracker crumbs add extra flavor.

Rice Krispies Peanut Butter Balls

2 c. peanut butter
1 stick butter, melted
1 pound powdered sugar
3 c. Rice Krispies
1 pound chocolate, melted

Mix first four ingredients
Roll into balls
Dip into chocolate

Both are simple and delish!
